Short answer: First, dry-fry fresh lion's mane in a hot pan until the moisture has evaporated, then cook it with butter or oil until golden brown. This gives it a firm, almost meaty texture reminiscent of crab or lobster. Don't use dried lion's mane powder for frying; stir it into coffee, a latte, or oatmeal instead, usually 1 to 2 grams per serving (according to the packaging, one scoop is about 1 gram).

For us, it actually started with coffee. GOYU was first called Cupplement and sold coffee with supplements in it. Honestly, that concept didn't work out well.

In early 2023, we switched to powders, including lion's mane, specifically designed for you to add to your coffee, smoothie, or shake. Below, you'll find out how to do that, plus a few lion's mane recipes using the fresh mushroom.

What does lion's mane taste like, and why is it so well suited to cooking?

Lion's mane (bearded tooth, Hericium erinaceus) has a mild flavor and a firm, stringy texture reminiscent of crab or lobster. Because its flavor is mild, it readily absorbs butter, garlic, herbs, and soy sauce. So it works well in savory dishes and, as a powder, in drinks.

The mushroom has long been used as a food (Friedman, 2015). Want to learn more about the mushroom itself first? Then read our article about what research says about lion's mane.

Do you cook with fresh lion's mane or lion's mane powder?

Cook fresh lion's mane by frying, roasting, or stewing it as a vegetable or meat substitute. Stir dried powder into drinks and breakfast foods in small amounts. Powder is dried, ground mushroom, so it is more concentrated than fresh mushroom because the water has been removed.

What is it? Whole, fresh mushroom Dried and ground fruiting body
Amount per serving About 100-250 g per person as a main ingredient 1-2 g per cup or bowl (1-2 scoops)

Shelf life For a few days in the refrigerator, in a paper bag Store in a cool, dry place until the date on the package

How do you prepare fresh lion's mane so it doesn't get spongy?

Clean it dry, tear or cut it into slices or pieces, and first fry it in a hot pan without fat until the moisture has evaporated. Only then add the butter or oil for a golden-brown crust. Lion's mane absorbs moisture easily, so rinse it only briefly if necessary.

  • Wipe the mushroom dry, or rinse it briefly and then dry it thoroughly.
  • Tear or cut it into slices or pieces, depending on the dish.
  • First dry-fry lion's mane in a hot pan without fat. This releases the moisture and gives it a nice crust before you add butter or oil.
  • Always cook fresh mushrooms thoroughly and never eat them raw.

Recipe: lion's mane steak

This is the best-known way to cook with fresh lion's mane. You dry-fry thick slices, then baste them with butter and garlic. Its firm texture makes it savory and almost meaty.

Allow about 125 g fresh mushroom per person.

Ingredients for 2 people:

  • 1 large fresh lion's mane (about 250 g)
  • 15-30 g butter or 1-2 tablespoons olive oil
  • 1 garlic clove, finely chopped
  • salt and pepper to taste
  • optional: 2 sprigs of fresh thyme or some parsley
  • optional: 1 teaspoon (5 ml) soy sauce
  1. Cut the lion's mane into slices about 1.5 cm thick.
  2. Heat a dry frying pan over medium-high heat and fry the slices without fat for 3 to 4 minutes per side, until the moisture has evaporated and they turn golden brown.
  3. Add the butter or oil and garlic, and fry briefly.
  4. Baste the slices with the butter from the pan and season with salt, pepper, and fresh herbs or soy sauce, if desired.
  5. Serve immediately, for example with roasted vegetables or bread.

Recipe: Creamy lion's mane pasta

A quick weeknight recipe. Torn, golden-brown fried lion's mane takes the place of chicken or seafood here.

Ingredients for 2 people:

  • 200 g pasta of your choice
  • 200 g fresh lion's mane, torn into pieces
  • 15 g butter or 1 tablespoon olive oil
  • 1 garlic clove, finely chopped
  • 100 ml cooking cream or a plant-based alternative
  • 30 g grated cheese or 2 tablespoons nutritional yeast
  • salt and pepper to taste
  • a handful of fresh parsley
  1. Cook the pasta according to the package instructions.
  2. First dry-fry the lion's mane, then fry it in butter or oil until golden brown. Then add the garlic.
  3. Add the cream and simmer gently for 2 to 3 minutes.
  4. Stir in the drained pasta, add the cheese or nutritional yeast, and season to taste.
  5. Finish with fresh parsley.

How do you make lion's mane coffee without lumps, and how much powder do you add?

Stir 1 to 2 grams of powder, about 1 to 2 scoops, into a cup of freshly brewed coffee and briefly mix with a milk frother or blender. This helps the powder dissolve evenly without forming lumps. The powder package recommends taking 1-5 scoops (about 1-5 g) once a day, mixed with water or coffee.

Lion's mane powder itself contains no caffeine, but your coffee does. The European Food Safety Authority (EFSA) considers up to 400 mg of caffeine per day, spread throughout the day, not to be a safety concern for healthy adults. During pregnancy and breastfeeding, the limit is 200 mg per day (EFSA, 2015).

Lion's mane coffee (1 cup)

  • 250 ml freshly brewed coffee
  • 1-2 g lion's mane powder (1-2 scoops), within the serving recommendation on the package
  • optional: 50 ml milk or a plant-based alternative and some sweetener
  1. Make your coffee as you normally do.
  2. Stir in the lion's mane powder. Use a milk frother or blender for a smooth, lump-free texture.
  3. Add milk and sweetener to taste.

Lion's mane latte (1 cup)

  • 1 shot of espresso (about 30 ml) or 100 ml coffee
  • 200 ml milk or a plant-based alternative
  • 1 g lion's mane powder (1 scoop)
  • optional: a pinch of cinnamon or 1 teaspoon honey
  1. Heat and froth the milk.
  2. Mix the lion's mane powder with the espresso to make a smooth base.
  3. Pour the frothed milk over it and finish with cinnamon or honey.

Recipe: lion's mane oatmeal

A simple breakfast. Stir 1 to 2 grams of powder into warm porridge, and you’ll barely taste its mild, earthy flavor. Stir in the powder at the very end, otherwise it will stick to the pan.

The directions on the package recommend taking it during or right after a meal, so having it with breakfast works perfectly.

  • 50 g rolled oats
  • 250 ml milk or a plant-based alternative
  • 1-2 g lion's mane powder (1-2 scoops)
  • 1 banana or 75 g blueberries
  • optional: 1 teaspoon cinnamon, 1 tablespoon nut butter
  1. Bring the oats and milk to a boil and simmer gently for 3 to 5 minutes, stirring.
  2. Remove the pan from the heat and stir in the lion's mane powder.
  3. Serve with fruit, cinnamon, or nut butter.

Is anything lost from lion's mane when you heat it or stir it into hot coffee?

We don’t really know. How heating affects the compounds in lion's mane, such as hericenones and beta-glucans, has barely been studied in this mushroom. In any case, fresh mushrooms are cooked thoroughly for culinary and food safety reasons.

The powder blends well into coffee, but there is no data on what hot coffee does to its compounds.

Beta-glucans are polysaccharides (long chains of sugar molecules) that occur naturally in the cell walls of mushrooms. Hericenones are compounds found mainly in the fruiting body of lion's mane (Friedman, 2015).

How do you add GOYU lion's mane powder to your coffee or breakfast?

Our lion's mane powder is organically ground fruiting body in a 60 g bag, with no fillers. The packaging says: "Take 1-5 scoops (approximately 1-5 g) once daily, mixed with water or coffee. Preferably during or immediately after a meal." At 2 g per day, one bag lasts 30 days.

For our powder: Lion's Mane is naturally high in protein** and Lion's Mane is naturally high in fibre**

**Approved health claim (Regulation (EU) No 432/2012) or nutrition claim (Regulation (EC) No 1924/2006).

According to the packaging, one scoop is about 1 gram, but one customer weighed about 1.5 grams using the scoop (Judge.me, October 2026).

For precise measurements, use a kitchen scale that measures in 0.1 g increments. One customer told us they transfer the powder into a jar at home because it's easier to scoop from than the bag. Not a bad idea if you add it to your coffee every morning.

In 37 reviews (average rating 4.86 out of 5), customers mainly mention that the powder mixes well into coffee, shakes, yogurt and oatmeal, and has a mild taste (Judge.me, October 2026). When is cooking with lion's mane or drinking lion's mane coffee less suitable?

If you're allergic to mushrooms or fungi, cooking with lion's mane isn't for you. If you use lion's mane powder daily, consult your doctor or pharmacist first if you're pregnant, breastfeeding or taking medication, and follow the directions for use on the packaging. If you drink lion's mane coffee, also keep an eye on your total caffeine intake.
