Short answer: A matcha whisk (chasen) is a whisk carved from a single piece of bamboo with many thin tines. Rinse it with lukewarm water straight after use, without soap and not in the dishwasher, and let it dry on a holder. Replace it when tines break off, lose their curl or when you see mould. Choose a whisk with thin, even tines, on its own or in a set with a holder.

At GOYU we sell a separate bamboo matcha whisk and matcha sets with whisk, scoop, bowl and holder. What is in a complete set is explained in matcha starter kit: what do you need? This article is about the whisk itself: how to look after it, when you need a new one and which whisk to choose.

What is a matcha whisk (chasen)?

A matcha whisk, chasen in Japanese, is a small whisk carved from a single piece of bamboo. The bottom is split into many thin, slightly curled tines. With it you mix matcha and water without lumps and whip up foam. It is also called a bamboo whisk or matcha brush.

The traditional preparation also includes three other items: the bamboo scoop (chashaku), the bowl (chawan) and the whisk holder (chasen naoshi). Our Matcha Whisk - Bamboo is handmade from bamboo and plastic-free.

How do you use a matcha whisk?

Whisk matcha with a little water in a quick M or W motion from your wrist until fine foam forms, then top up with water or (plant-based) milk. The full method, with amounts and water temperature, is in how to make matcha with a whisk, step by step. For the whisk itself, keep three things in mind:

  • Wet it first. Briefly dip the tines in warm water. A dry whisk is stiff; wet tines bend more easily and break less quickly. This is a common tip, not something on our label.
  • Whisk, don’t stir in circles. Circles mix, but whip little air into the water. A quick M or W motion makes foam.
  • Don’t press on the bottom. Keep the tines just above the bottom of a wide bowl. That way they keep their shape for longer.

How do you clean a matcha whisk?

Rinse the whisk with lukewarm water straight after use and let it air-dry on a holder. That is what the instructions for our whisk say. Don't use soap: bamboo absorbs smells and flavours. Don't put it in the dishwasher either, as the bamboo can dry out and split.

  • Also rinse the inside of the tines, where matcha residue can stay behind.
  • Let it dry completely before putting it away. Never store it wet in a closed box: moisture without air is the best chance of mould.
  • Don't dry it in the sun or on a radiator, as the bamboo can crack.

Why do you need a holder (chasen naoshi)?

On a holder the whisk dries upright, with the tines pointing down and in their original round shape. Without a holder the tines lie flat or get pressed together, and then they lose their curl faster. The Matcha Set White and the Matcha Set Black include a Japanese holder with the whisk, scoop and bowl.

How long does a matcha whisk last and when do you replace it?

That depends on how often you use it and how well you look after it. There is no fixed period. Replace your whisk when you see one of these things:

  • Tines break off, or there are loose bits of bamboo in your matcha.
  • The tines are flattened or have lost their curl, so you get less foam.
  • You see discolouration or mould, or the whisk smells musty. Then throw it away.

You can buy a new whisk separately as a bamboo matcha whisk. All sets and the separate whisk are side by side on buy a matcha set.

Which matcha whisk should you choose?

Choose a whisk carved from a single piece of bamboo with thin, even tines that are not bent or broken anywhere, and make sure you can let it dry on a holder. Whether you buy it on its own or in a set depends on what you already have:

Your situation What fits
You already have a bowl, scoop and holder, but your whisk is worn out A separate bamboo whisk
You are just starting with matcha and have nothing yet A matcha set with whisk, scoop, bowl and holder (white or black)
You want matcha powder and a whisk in one go Matcha Powder with Matcha Whisk: 2 bags of matcha powder and a bamboo whisk, without bowl and holder
You mainly make lattes or mix powders into a drink A frother works too, see the comparison below

Matcha whisk or frother: which works best?

For a traditional bowl of matcha a bamboo whisk works best. For a quick latte a frother is handy. This is how they differ:

Frequently asked questions

Do you need to soak a matcha whisk first?

You don't have to, but it helps. A whisk you briefly dip in warm water is more flexible and breaks less quickly. That applies especially to a new or very dry whisk.

Can a matcha whisk go in the dishwasher?

No. Only rinse it with lukewarm water, without soap, and let it dry on the holder. In the dishwasher the bamboo can dry out and split.

What do you do if your matcha whisk goes mouldy?

Throw it away and get a new one. You can't properly get mould out of the thin tines. Prevent it by letting the whisk dry completely after rinsing before you put it away.

Can you make matcha without a whisk?

Yes, with a small whisk or a frother. A bamboo whisk does give the finest foam.
