The artichoke is a thistle-like plant from the Mediterranean region and a relative of milk thistle. In the kitchen you eat the fleshy base of the flower bud. For an extract, mainly the leaves are used, which have a bitter taste. Cynarin is one of the characteristic plant compounds of artichoke and partly responsible for that bitter taste.
