Using shiitake powder: how to cook with it

Short answer: Use shiitake powder as a savory seasoning in hot dishes that cook thoroughly, such as soup, broth, sauce, risotto, or stew. Use 1-2 scoops per serving (about 1-2 g), as stated on our packaging. Don’t use it raw in a smoothie, yogurt, or cold sauce, because raw or insufficiently cooked shiitake can cause a skin rash in some people.

Read our explainer article to learn exactly what shiitake is and what it contains. This article is all about the practical side: what do you do with that bag of powder in your kitchen cupboard?

Honestly, I find shiitake powder the easiest of all our mushroom powders to use, as long as you use it in a hot dish that cooks thoroughly.

What does shiitake powder taste like?

Shiitake powder tastes savory and earthy, with the full-bodied umami flavor you also know from dried shiitake. It isn’t sweet or fresh-tasting, so it goes with savory dishes, not sweet ones.

Umami is the fifth basic taste, alongside sweet, sour, salty, and bitter: the savory, full-bodied taste of things like broth or soy sauce. A spoonful of shiitake powder adds depth to soup, broth, or sauce without visible pieces of mushroom.

The powder is brown, so it makes a light-colored sauce slightly darker. It also doesn’t dissolve completely: you’ll notice it makes a clear broth a little cloudy.

Why does shiitake powder always need to cook?

Raw or insufficiently cooked shiitake can cause an itchy, streak-like skin rash in some people. The French food safety authority ANSES therefore says shiitake should be cooked thoroughly, even when it’s powdered (ANSES, 2021). So add the powder at the start of cooking, and read shiitake side effects and why you shouldn’t eat it raw to learn what’s known about the rash.

How do you use shiitake powder in soup, broth, and dashi?

Soup and broth are the easiest ways to use shiitake powder. Stir the powder into the water or soup before it comes to a boil, then let everything simmer as you normally would. That way, the powder cooks along with it.

  • Vegetable or lentil soup: Stir 1-2 scoops per serving into the soup at the start of cooking.
  • Quick broth to drink: Bring water with shiitake powder, a slice of ginger, and a splash of soy sauce to a boil, then let it simmer gently for a few minutes. This is really the only way I’d drink shiitake powder.
  • Vegetarian dashi: Dashi is a Japanese broth, and the vegetarian version is made with kombu (seaweed) and dried shiitake. Using powder instead of whole shiitake is quicker, but the broth will be cloudier. Make sure to cook the powder thoroughly here too.
  • Miso or noodle soup: Cook the powder in the broth first, then add the rest.

How do you use shiitake powder in sauces, risotto, and stews?

In sauces, risotto, and stews, add shiitake powder along with the liquid, such as broth, cream, tomatoes, or wine. Then the powder cooks for as long as the rest of the dish. For dishes that cook on the stove for a long time, such as stew or ragù, you don’t need to give it any further thought.

Dish When to add it? Per serving
Soup Add at the start, then simmer 1-2 scoops
Broth or dashi Add it to the cold water, then bring to a boil and let it simmer 1-2 scoops per mug
Cream sauce or gravy Add it along with the liquid and let it reduce 1 scoop
Risotto Stir into the broth you use to cook the rice 1-2 scoops
Stew, chili, or ragù Add at the start and simmer along with the rest 1-2 scoops
Stir-fry Add it to the sauce and let it simmer a little longer; don’t just stir it in briefly 1 scoop
Smoothie, yogurt, cold dressing Don’t do this; it stays raw -

Do you cook vegan? Shiitake powder is handy for giving a sauce or stew a fuller, savory flavor without meat or a bouillon cube.

Can you put shiitake powder in a smoothie or coffee?

Better not. A smoothie, yogurt, or overnight oats isn’t heated, so you’re essentially eating the shiitake raw. With coffee, you pour hot water over the powder, but that’s not the same as cooking it all the way through. We don’t know whether that’s enough, and none of our sources say anything about it.

If you want mushrooms in your coffee, choose a different kind. How to make mushroom coffee has three recipes with lion's mane, chaga and reishi. Save shiitake for the soup pot.

How much shiitake powder should you use per dish?

Our shiitake powder packaging says: "Take 1-2 scoops once or twice a day (about 1-2 g). Preferably during or just after a meal." So use 1-2 scoops per serving, up to a maximum of 4 scoops (about 4 g) per person per day.

If you're cooking for more people, calculate the amount per person. A pot of soup for 4 people takes 4 to 8 scoops, so everyone gets 1-2 g in their bowl. If you have two bowls yourself, just add them together.

One scoop is about 1 gram, according to the packaging. For an exact measurement, use a kitchen scale that weighs in increments of 0.1 grams. Do not exceed the daily dose stated on the packaging, even if you enjoy it in your food.

Per 100 g, our shiitake powder contains 291 kcal, 21.7 g of protein and 41.3 g of fiber. In a 1-2 g serving, that's naturally only a small amount. Our powder claim: Shiitake is naturally high in protein** and Shiitake is naturally high in fibre**

How do you store shiitake powder?

Store shiitake powder in a cool, dry place and out of reach of children, as indicated on the packaging. A cupboard away from the stove and dishwasher is ideal. Close the packaging tightly after use to keep moisture out.

  • Use a dry scoop. A wet scoop or sprinkling it over a steaming pot can cause clumps in the bag.
  • Check the date. The best-before date and batch number are on the packaging.
  • Does it smell or look different than you're used to, or are there damp clumps? If so, stop using it.

Frequently asked questions

Can you eat shiitake powder raw?

It's best not to. Raw or undercooked shiitake can cause a rash in some people, and ANSES says this also applies to powder. So always let the powder cook thoroughly.

How much shiitake powder should you use per day?

According to our packaging, 1-2 scoops (about 1-2 g), once or twice a day. That's a maximum of about 4 g per day.

Does shiitake powder dissolve in water?

Not completely. The powder is mostly made up of fiber, so it will make broth cloudy. It won't affect the taste.

Can you add shiitake powder to coffee?

We don't recommend it. Pouring hot water over the powder is not the same as cooking it thoroughly. For coffee, it's better to use lion's mane, chaga, or reishi.

How can you best bring out the umami flavor of shiitake powder?

In dishes with liquid that simmer for a while, such as soup, broth, risotto, and stew. The powder disperses well and cooks along with them.
